Supercute Smiley Faces

Let’s face it, we’re all in need of a little something to smile about just now.  While not solving the world’s problems, these biscuits should certainly bring some brightness to your day.  These are made with a simple empire biscuit recipe, but with added sprinkles for joy.  I used a smiley face cookie cutter set from Lakeland – but if you don’t have one you can just use a round cutter and make the eyes and mouth yourself with a sharp knife.


To make around 9 sandwich biscuits you’ll need:

  • 100g plain flour
  • 75g butter, chopped
  • 25g icing sugar
  • a pinch of salt
  • 2 tablespoons rainbow sprinkles

Preheat your oven to 180 degrees, and rub the butter into the flour until it looks like breadcrumbs.  Add the salt and sugar and knead until it comes together into a dough.  Finally add in the sprinkles and knead through evenly, adding more if you think the dough isn’t colourful enough.  Wrap it in clingfilm and chill in the fridge for at least half an hour, but it can sit there quite happily for 48 hours.


Once your dough is lovely and chilled, dust your surface with flour and roll it out until it’s a couple of millimeters thick.  You can start cutting out the faces now.  Re-roll the dough again to cut out more, but only do this process once, as it starts to get chewy after that.

Pop them on a lined baking tray and bake for about 7 to 9 minutes, until they start to get slightly golden around the edges.  They can catch pretty quickly so keep a close eye.


Let them cool on a wire rack while you make the buttercream filling.  You’ll need:

  • 100g soft unsalted butter
  • a drop of vanilla
  • 225g icing sugar
  • 1 and a half tablespoons of milk.
  • 1 tablespoon rainbow sprinkles

Beat the butter for a good couple of minutes until pale and fluffy.  Add the icing sugar and beat until thoroughly mixed.   Add the vanilla and milk and keep mixing until lovely and smooth.  Finally, add the sprinkles and mix through.  Now, as long as your biscuits are cool you can sandwich them together, by spreading a dollop of buttercream on the bottom half of each pair.

And that’s it!  A simple way to bring a wee bit of happiness to your day.  These biscuits are crisp, creamy, and packed with the colours of the rainbow – what more could you ask for?!
